Loaded Potato Salad

Potatoes. You either love them or you don’t. I, personally have a “love-hate” relationship with them. One minute, I can’t get enough of them and every dinner time meal I make will include them, and then the next thing you know, I enforce a strike against them.

Potatoes are really a good, hearty staple that I do try to eat often. However, they do tend to wear out their welcome fast. So, to avoid potential potato boredom, I look for ways keep them interesting.


3 large white potatoes (cubed)



Paprika (for garnish; optional)

Parsley (for garnish; optional)

Double cheddar shredded cheese

1/2 c Ranch dressing

1/4 c Mayo


Once the potatoes have been boiled and drained, season with the salt, pepper, ranch dressing and mayo, then set aside in the fridge to cool. Before serving, mix in the cheddar cheese, then garnish with paprika and parsley.

Serve when ready.
