What kid doesn’t like an after-school snack?! I know I did. Whether it was a fresh fruit salad, some veggie sticks with dip, a plate of cookies, or even a half moon and a glass of milk, knowing there would be some kind of edible delight waiting for me when I got home from school, was often the highlight of my day. I recently bought a tube of Pillsbury Country Biscuits with the intention of making them as an appetizer for this weekends family dinner, but I soon changed my mind and decided to scrap that idea, and instead, I chose to make mini pepperoni pizzas, as an after-school snack for my son. This was by far the easiest thing that I have ever made.


1 tube Pillsbury Country Biscuits (yields 10)
Mini pepperoni slices
1 can pizza sauce
Shredded mozzarella cheese


Preheat oven to 350°F. Open the tube of biscuits, carefully separating them. On a clean surface, roll out each biscuit to approximately 2″ in diameter; placing them on a wax or parchment paper lined cookie sheet.

Using a fork, gently poke holes in the dough; this will help to keep it from swelling.
Next, using a small spoon, spread on the pizza sauce, followed by the pepperoni and cheese; topping it off with a few dollops more of sauce. Place them in the oven for 15 minutes or until the edges start to brown lightly, then remove from the oven, placing them on a cooling rack.
