Lemon Baked Cod

Over the years, I’ve come to know that fish isn’t for everyone. You either love it, or you don’t. Culturally, fish is something that is guaranteed to be presented at every family gathering. Baked, fried, steamed, put into soup, or escovitched; these are a few of the ways in which my family enjoys their fish. Personally, my favorite type is King fish because of it’s texture and richness. Generally speaking, I like most fish. The recipe below highlights cod fish; another of my favorites.


1 package Great Value Cod Fish

Salt *to your taste*

Black pepper *to your taste*

Garlic powder *to your taste*

2 tsp dried thyme leaves

Red/yellow grape tomatoes *washed*

1 lemon *6 slices*

1/4 c olive oil *vegetable oil works as well*


Preheat oven to 400°F. Wash and pat dry the cod fish.

Season both sides of the fish and place into a baking dish with the oil.

Toss in the tomatoes, and top with the lemon slices. Place in the oven for 20-25 minutes

Serve with rice and enjoy!
