Growing up, one of my favorite breakfast foods was the Eggo brand pancakes; either plain or blueberry flavored. Now, I’m not entirely sure when I was introduced to Eggo waffles, but it didn’t take long for my love of frozen pancakes to fade. Don’t get me wrong, pancakes are good, but the personality that a waffle possesses, appeals more to my palate.


2 c. flour

1/3 c. sugar

1 tbsp baking powder

1/4 tsp salt

1 tsp vanilla

1/2 milk or water

1 egg (optional)

1/2 vegetable oil


Heat waffle maker to medium-high setting. In a large bowl combine the above ingredients. If batter is too thick, add more milk or water to reach the desired consistency. Using a measuring cup *I used 1 cup*, scoop batter and pour onto griddle in a circular direction. Close lid and allow to bake for about 4 minutes or until golden brown. Repeat until you have your desired waffle count. Serve when ready and ENJOY!
