
Chocolate Chip Coconut Pancakes
Waffles and pancakes are an absolute hit with my family; especially with the little folks. Given the opportunity, they’d have either or both if they could. Today they requested chocolate chip pancakes, topped with shredded coconut. Growing up, I was more of a pancake girl and my sister leaned more towards waffles. But as I got older, I learned to love both. I also learned that I have waffle moods and pancake moods. Am I the only one that has this? LOL I can’t be. And if I am, that’s ok. It just means more for me and the little folks. 😉
Ingredients
1 1/2 c flour4 tbsp sugar
1 egg *white membrane removed*
1 tbsp baking powder
1 1/2 c milk
1/2 c oil
1 tbsp vanilla
1 c milk chocolate chips
Shredded coconut *topping*
Directions
Preheat oven to 180. Turn on stove to medium-high, and heat frying pan with oil. In a bowl, add flour, baking powder, sugar and whisk togther.Next add the milk, egg, oil, vanilla, chocolate chips and mix until a smooth texture has been achieved.
Scoop the batter and allow to brown on each side for 1-2 minutes, adjusting temperature for a golden brown appearance.
Once you’ve made all the pancakes, place them in a baking dish and allow them to stay warm in the oven until ready to serve. Top with shredded coconut and your choice of syrup and ENJOY!
