Say what you will about pork, I for one, absolutely love it. My fondest memory of eating pork chops, surrounds my mother. As much as I love my dads cooking, there’s just something romantic and magical about the way mom prepares food. From watching her sprinkle a bit of this spice, and a dash of that, to how she plates a meals is incredibly mesmerizing. But the thing that sticks out the most about when mom would serve this cut of meat, is that she would always pair it with sweetened apple sauce. Talk about finger lickin’ good. The combination of sweet and savory as it meets the palate still makes me get up for seconds.


1 pkg Pork Chops

Season to your taste with the following:

2 tbsp Vegetable oil (for frying)


Black pepper

Garlic powder

Minced garlic

Onion powder

Chili powder

Cayenne pepper


1/2 Red Onion

1 Roma Tomato sliced

Baby spinach (1-2 handfuls)

2 cups Rice (washed)


Preheat oven to 350. Season and coat the meat well with the above mentioned ingredients then place in the pan, frying for approximately 10 minutes.

Next, remove the meat,set aside, and put the spinach in the pan, then top with the meat.

Now, slice the onions and tomatoes covering the meat and spinach.

Remove the pan from the stove and transfer it to the oven to finish cooking, uncovered for 20 minutes. (Feel free to set a timer)

While the meat is in the oven, wash and begin making the rice. Once the meat has cooked, remove from the oven, begin plating, ENJOY!

PS…This goes well with a sparkling white wine.
