Strawberry White Chocolate Cookies

This week the kids and I enjoyed the freshness of the fruit we buy from Costco, but as we headed toward the end of the week, I wanted something that would jazz up our delightful fruit platter. At the suggestion of the little people, I added some white chocolate chips to their fruit bowls, and it was then that I thought about making a cookie that incorporated fruit and white chocolate. It was easy to choose strawberries since we were running low on everything else, so I thought, “Meh! Why not?!” So, I did.


1 c fresh strawberries, washed and chopped
2 1/4 c. flour
1/2 melted butter
1/2 brown sugar
1 tsp baking powder
1 c. white chocolate chips
1/4 tsp salt
1 1/4 c. milk


Preheat oven to 350; bake 20 minutes.
Line a baking sheet with parchment paper and set aside. Next, in a medium sized bowl, wash and chop the strawberries and set them aside.
In a mixing bowl, cream together the melted butter, sugar, and vanilla until smooth; followed by the strawberries.
Gradually add the flour mixture, alternating with milk. If your mix is too wet, add a touch more flour, if too dry add more milk.
Using an ice cream scoop, place the cookie dough onto the lined baking sheet, approximately 1 inch apart.
Place into the oven and remove after 20 minutes.
Let cool about 5 minutes before transferring to a wire rack

Serve with coffee, or tea. ENJOY!
