Cookies have always been a treat that I’ve struggled to make. No matter how closely I followed the recipe, they would, often times, be an EPIC FAIL. Lately though, I’ve been wanting to become better at this art and have been experimenting with different cookie methods starting with the most BASIC cookie; CHOCOLATE CHIP. These cookies NEVER turn out right for me, and although my mind said to give up and write them off as one of those things I just wasn’t meant to be good at, I was determined to give it another try.
Chocolate Chip Butterscotch Cookies
Ingredients1 c. all-purpose flour
1 c. cake flour
2 tsp salt
1 tsp baking soda
1 c. brown butter
1/2 c. brown sugar
1/4 c. white sugar
2 tsp vanilla
1 c. milk chocolate chips
1 c. butterscotch chips
DirectionsPreheat oven to 350. Line a baking sheet with parchment paper and set aside. In a saucepan, heat butter and stir until melted and turns brown in colour; remove from heat and allow to cool down slightly.
In a mixing bowl, add both flours, baking soda, salt and mix. Then, in a separate bowl, cream together the brown butter, both sugars, eggs, and vanilla until you achieve a creamy and smooth consistency.
Next, add the flour mixture and continue to mix until fully incorporated, then add the chocolate chips.
With an ice cream scoop, place the dough, approximately an inch apart, onto the lined baking sheet and press flat with a spoon and then place in the oven to bake for 12-15 minutes.
Remove from the oven and let cool about 5 minutes before transferring to a wire rack. Repeat the same steps with the remainder of the dough.
Serve with coffee, tea or a glass of cold milk and ENJOY!
