After relentlessly scouring the internet for the “best” zucchini bread recipe, I think I just might have found it on Genius Kitchen. If making this zucchini bread were an actual race, I probably would have won. I say that because I managed to get everything I was going to need prepared, while getting my oldest ready for school, answering his 21 questions, as well as while carrying my youngest on my hip. Lol there’s never a dull moment in my house. I have only ever had zucchini bread twice in my life, and I can distinctly remember having wished I had asked for more because it was just that good. Starting this blog has opened up my subconscious to reflect on the kinds of meals, and baked goodies that I was exposed to; zucchini bread being one of those oh so good things. Such reflections are what allows me to introduce my children to things that my parents showed me. It’s moments like this that bring me so much joy.


3 c flour

1 c Greek vanilla yogurt

2 tsp baking powder

2 tsp baking soda

1 tsp salt

1 c white sugar

1 c light brown sugar

2 1/2 vanilla extract

2 1/2 tsp cinnamon

1 tsp nutmeg

1/4 tsp allspice

2 c shredded zucchini

3/4 c oil (vegetable oil was used for this recipe)

1 tbsp orange zest

1 tbsp lemon zest

Glaze: 1 c powdered sugar

2 tbsp milk

1 capful vanilla extract

1 – 2 tbsp lemon juice (optional)

1 tbsp orange zest

1 tbsp lemon zest
