Blueberry Shortbread Cookies
Who doesn’t love a good cookie? I know I sure do. Like any food, cookies should be savored. These shortbread cookies were a fun bonding activity for me and my little guy. With my guidance, he did all the work, and I fully enjoyed all that his efforts produced.
While looking for the “perfect” shortbread recipe, I asked my son if he wanted to add anything “fun” to the mix, his response was simple, “Blueberries, mommy!,” to which I responded, “Done!” Upon doing my research of this classic Scottish biscuit, I realized quickly, that like many other things, there are tons of different variations on how to make this buttery delight. The recipe I ultimately ended up using is by Canadian Living.

Ingredients
3 sticks unsalted butter – softened1 c powdered sugar
2 tsp vanilla extract
4 tsp white sugar
1/4 salt
2 1/2 c flour
1 c frozen blueberries (minced finely and strained)
