Lazy days are definitely a thing WE ALL HAVE, and now that there’s a global pandemic happening, the desire to do anything, namely cooking, just isn’t there. I changed that today; sort of. Like most people, figuring out what to make for lunch can sometimes be challenging, but that wasn’t the case today. Today, was just one of those days where I kept it simple. I grabbed everything from my fridge, tossed it into a bowl, and it turned out well.

Ingredients

Romaine lettuce

Baby carrots

Red bell pepper

Salted almonds

Halloumi cheese

Garlic croutons

EVOO *Extra Virgin Olive Oil*


Directions

Wash and chop veggies into bite sized chunks. Carefully slice almonds into length wise pieces

Slice the Halloumi cheese into 1/4 inch slices, then turn the stove to a medium/low heat, adding 1 tbsp of EVOO to a frying pan. Lightly fry the cheese until golden brown on each side *yum!*

Combine the veggies in a bowl. Cover with warm Halloumi and garlic croutons, the top it off with your favorite salad dressing.

Finally, sit back and ENJOY!
